What's for Dinner!


Well I finally decided to do a food post about one of my new favorite summer recipes. The thing I love the most about this recipe is how many different ways you can use it in your cooking. For dinner tonight we are having Chili-Lime Chicken Kabobs. I absolutely love to grill in the summer so I am always on the lookout for great grilling recipes. Also I am trying to make use of our anniversary present this year as much as possible. This year we got a combination charcoal and propane grill. It really is the best of both worlds. The recipe is super easy and you can put with just about any side dish. I also like to use the marinade on chicken and grill it to use as a salad topping - Yummy! I took a couple of photos so you can see what it looks like. If you are like me you like to see the pictures of things you are about to cook. I almost never cook something that I haven't seen in a photo first. Tonight my side dish of choice is Mediterranean Curry Cous-Cous. However last time I made this recipe with a Greek Salad with a homemade vinaigrette. I will list the recipe below. Here are the photos to tempt your appetite. Enjoy!



Ingredients:
6 tablespoons of olive oil
3 tablespoons of red wine vinegar
2 fresh limes, juiced
2 tsp. of chili powder
1 tsp. of paprika
1 tsp. of onion powder
1 tsp. of garlic powder
cayenne pepper to taste
salt and freshly ground pepper to taste
1 1/2 lbs of boneless chicken breast - cut into cubes
Mushrooms
Red Onion - cut into chunks
Bell Pepper - cut into chunks
Skewers


***You can put any combination of veggies and fruit on your kabobs - these are just my favorites. 

Directions:
In a small bowl combine first 9 ingredients. Whisk together. Place chicken and marinade in a Ziploc bag and marinate for 3 or 4 hours in the refrigerator.

Preheat grill on med-high heat. Thread chicken and vegetables on to skewers and discard marinade.


Grill skewers for about 10-15 minutes until juices run clear.
